Ribbon pakoda

Ingredients
- 4 cups rice flour
- 2 cup besan or gram flour, roasted
- 200 gms homemade butter
- 3 teaspoons chilli power
- Salt to taste
- Oil for frying
Method
- Sieve out the flours together into a large bowl
- Add the butter, salt, chilli powder and mix well
- Heat some oil in a pan
- Add some water to the flour mixture and made a stiff dough.
- Grease a murukku maker with butter and add the ribbon pakoda mould to it. Pipe them into the oil in clusters
- Deep fry them until golden brown and store in an airtight container
Shahi Samosa

Ingredients
- 1 cup all purpose flour
- 1 tablespoon ghee
- 1/2 teaspoon carrom seeds
- 1 tablespoon sesame seeds
- 2 tablespoons cashew nuts, chopped
- 1 tablespoon pistachios, chopped
- 2 tablespoons raisins
- 1 teaspoon dried mint powder
- 1 teaspoon amchur powder
- 1/2 teaspoon sugar
- 1 teaspoon cumin seeds powder
- Oil to fry
Method
- In a large bowl, add the flour, carrom seeds and a pinch of salt and ghee and mix well
- In another bowl mix well the chopped nuts, mint powder, amateur powder, sugar, cumin seeds powder and a bit of salt
- Roast the above mixture till fragrant. Once cooled, add the sugar, raisins and mix well
- Divide the dough into equal portions
- Roll out one ball into a thin circle
- Cut into two halves. Brush one portion with a bit of water and form a cone
- Place a teaspoon of the filling into the cone. Seal the edges into the shape of a samosa with wet fingers
- Deep fry till golden brown

Ingredients
- 4 cups rice flour
- 1 cup moong dal
- 2 tablespoon butter
- 1 teaspoon cumin seeds
- ½ teaspoon hing
- Salt to taste
- Oil for deep frying
Method
- Grind and sieve the moong dal till you get a fine powder
- Sieve it into a large bowl and add the rice powder, salt, hing, cumin seeds and butter to it
- Mix well till the butter is incorporated
- Add water little by little to make a stiff dough
- Grease a murky maker with oil or butter
- Place the round mould and squeeze batter into hot oil to make clusters
- Fry till golden yellow
Diwali chivda

Ingredients
- 1 cup red or white poha
- ½ cup roasted chana dal
- ½ cup peanuts
- ½ cup cashew nuts
- 2 tablespoons raisins
- 10 curry leaves
- ½ teaspoon cumin seeds

- ¼ tsp red chilli powder
- ¼ tsp turmeric powder
- a pinch of asafoetida
- 1 teaspoon sugar
- Salt as required
- Oil for deep frying
Method
- Heat the oil in a pan
- Place the poha in a steel sieve and immerse it in the hot oil till crisp
- Remove the fried poha on a plate lined with paper towel
- Fry the chana dal, peanuts, raisins, sesame seeds, cashews and curry leaves in a similar manner separately and drain over a tissue
- Now in the same pan crackle mustard seeds, cumin seeds, hing, salt, sugar and chilli powder
- Now add the fried ingredients to the pan and roast for 2-3 minutes
Thattai

Ingredients
- 1 cup rice flour
- 2 tablespoons urad dal flour, roasted
- 1 teaspoon Bengal gram dal, soaked
- ½ teaspoon red chilli powder
- 1½ teaspoon homemade butter
- ½ teaspoon hing
- Salt to taste
- Oil for deep frying
Method
- In a bowl, mix together rice flour, gram flour, chilli powder and butter with your hands
- Add the soaked bengal gram dal, salt and hing mix. Add some water and make a slightly stiff dough
- Divide them into equal portions
- Grease a plastic sheet, place a ball of dough and flatten it as thinly as possible with your finger tips
- Prick few holes with a fork to prevent it from puffing while frying. Let it sit for 10 minutes
- Heat oil in a heavy bottomed pan over high flame
- Now reduce the temperature to medium, gently transfer the flattened dough on to your hands and slide it into the oil. Deep fry until golden brown
