5 minute lunchbox recipes for mums on the go!

Every mum loves to cook for her kids. However, when you are a working mum, it becomes difficult to manage so many tasks at once. You may not always find the time to cook a sumptuous, innovative meal for your child.

Don't fret though as we have 5 yummy and quick lunchbox recipes that you can prepare for your child in a jiffy.

#1 Mint Lemon Rice

#1 Mint Lemon Rice

Lemon rice is one of the most easiest rice recipes that can be made for your kid’s lunch box or for a quick meal. You can also add little more nutrition to the meal by adding a simple vegetable stir fry or a quick mixed vegetable salad to the rice.

The addition of mint (pudina) keeps the rice fresh and flavourful for the next few hours, so it goes well in the lunch box.

Ingredients:

One cup uncooked rice, Oil as per needed, 1 cup mint leaves , 1 tsp curry leaves, 1 Onion, ½ tsp mustard, Little turmeric powder, Lemon juice as needed(as per requirement), 2 green chillies olive oil (optional), ½ to ¾ tsp grated ginger (optional).

Instructions:

1.Pluck mint leaves, add them to a large pot filled with water. Rinse them well in more water. Drain them in a colander.

2.Soak rice for at least 15 to 20 minutes.

3.Cook it and set aside to cool completely.

4.While the rice cooks, add the mint leaves to a small blender jar. Blend it little coarsely without adding water. Set this aside.

5.Heat oil in a pan, add onion, when they are lightly golden, add mustard and lower the heat. When mustard splutter, add curry leaves, ginger, green chillies.

6.Then add the mint and sauté for 1 minute. Switch off the stove.

7.Add turmeric to the pan and add this to the cooled rice. Sprinkle salt and squeeze off lemon all over the rice. Mix well and you can also add some extra virgin olive oil before the rice is mixed.

Mint lemon rice is now ready to serve!

#2 Parantha Rolls

#2 Parantha Rolls

Parantha rolls are extremely easy to make and hardly take any time. This is one of the most healthy lunchbox option for your kids. We all know how kids always create a fuss to have vegetables with roti. Well this is a perfect way to blend the two together and make it interesting for the kids to eat.

Also, wrapping the parantha into rolls will be easier to carry and eat for your kid. Try this recipe at home to make yummy parantha rolls!

Ingredients:

Oil, 2 cooked paranthas, ½ cup chopped cabbage, 1 onion, ½ cup French beans, 1 cup carrots.

Instructions:

1.Heat a teaspoon of oil in a pan on medium heat. Add the onions, carrots and beans, sprinkle some salt and stir fry on medium heat until the carrots and beans are cooked.

2.When it is almost done, add in the chopped cabbage and stir fry it until the cabbage is almost softened. Stir in the pepper and check the spice levels and adjust to suit your taste.

3.The next step is to make the wrap.

4.Place the cooked parantha for the wrap on a working surface. Arrange a small portion of the roasted vegetables towards the centre of the parantha.

5.Fold the two opposite ends of the flat parantha over the filling. Start rolling the parantha from one open end over the two folded sides. Roll the entire parantha tightly and wrap a foil or butter paper around it.

The delicious healthy vegetable parantha rolls for the kid’s lunch box is now ready to serve.

#3 Vegetable Toast Sandwich

#3 Vegetable Toast Sandwich

All kids enjoy eating sandwiches and get really happy to see a delicious sandwich in their lunchbox. Vegetable toast sandwich is extremely easy to make and hardly takes a few minutes.

You can make a nice delicious sandwich for your kids on the busiest day of your life. Try this recipe to prepare a yummy vegetable sandwich for your little one!

Ingredients:

For green chutney- 1 cup coriander leaves, ½ tsp chaat masala powder, 1-2 green chillies, salt(as per requirement), 1-2 tsp water for grinding.

For sandwich: 8-10 whole wheat bread slices, 1 small tomato (thinly sliced), 1 small onion (thinly sliced), 1 small cucumber (thinly sliced), 1-2 boiled potato, chaat masala , salt.

Instructions:

Preparing the chutney:

1.Blend all the ingredients in a grinder or small blender. Add very little water. The chutney is slightly of thick consistency.

2.Keep the chutney aside.

Preparing the sandwiches:

1.Slice the bread corners if you want. Apply butter on the bread slices.

2.Apply the green chutney on the buttered slices.

3.Place the 2-3 slices of all the veggies alternately on four bread slices.

4.Sprinkle chaat masala and salt on the veggies alternately.

5.Cover these with the remaining bread slices. Now toast the sandwiches in a toaster or grill.

6.Remove when done and apply some butter on the top of the hot toast sandwich.

#4 Bread Upma

#4 Bread Upma

Bread Upma is an extremely delicious lunchbox meal for your kids. It is a flavour packed dish and will be loved by your kids.

Also this meal can be prepared easily in no time. Try this recipe to prepare a sumptuous bread upma meal for your child.

Ingredients:

5 slices bread, 1 big onion, 1 finely chopped green chilli, ½ tsp ginger and garlic paste, curry leaves, 1 finely chopped tomato, ½ tsp red chilli powder, ½ tsp garam masala powder, a pinch of turmeric powder, 1/4th tsp mustard seeds, 1/4th tsp cumin seeds, 1 tsp chana dal, 1 tsp urad dal, coriander leaves, salt, oil, water.

Instructions:

1.Cut the onion, green chilli, tomato and set aside.

2.Cut the bread slices into 4 small squares and keep aside.

3.Heat the pan with oil and add the mustard seeds, cumin seeds, 1 tsp chana, 1 tsp urad dal and fry.

4.Then add the onion slices, green chilli, ginger & garlic paste, curry leaves and sauté till onion turn a little brown. Add tomato pieces and cook till it turns mushy.

5.Add red chilli powder, turmeric powder and garam masala. Sprinkle littler water to make it into a thick paste.

6.Mix well and finally add the bread pieces .Toss it well. Make sure the bread pieces do not get crumbled & masala gets coated on the bread very well

The bread upma is now ready to serve!

#6 Nutella Banana Sandwich

#6 Nutella Banana Sandwich

This lunchbox meal is definitely going to earn you some extra love from your child. This recipe is extremely easy to make and will get lots of joy to your child’s taste buds. Also, the banana will provide calcium to your child.

Ingredients:

2 Banana, 2 tsp Nutella, 4 slices of whole wheat bread.

Instructions:

1.Cut the banana into small pieces.

2.Spread the nutella on one slice of bread.

3.Place the banana on the same slice of bread.

4.Cover it with the other side with other slice of bread.

The yummy nutella banana sandwich is now ready to serve.
