Ingredients

  • 11/2 cups pineapple, peeled and chopped
  • 1 cup milk powder
  • 1 cup desiccated coconut
  • 1 teaspoon ghee
  • 3/4 cup sugar, powdered
  • 1 tablespoon nuts, chopped
  • 1/4 teaspoon cardamom powder

Method

  1. Blend the pineapple chunks in a blender till you get a smooth paste.
  2. Roast the paste on a pan with the ghee till cooked.
  3. Add the coconut, sugar, cardamom powder and milk powder and turn the flame to low. Mix well.
  4. Turn off the flame after two minutes and cool the mixture.
  5. Grease your fingers with a little ghee and roll into laddoos.
  6. Garnish with chopped nuts.

Ingredients

For Rabdi

  • 1 litre full cream milk
  • 2 tablespoons sugar
  • 1 teaspoon rose water
  • 1/4 teaspoon cardamom powder

For sugar syrup

  • 1/2 cup sugar
  • 1/2 cup water
  • 1/4 teaspoon cardamom powder
  • 1/2 teaspoon rose water

For bread and garnish

  • 6 slices of bread
  • 2 tablespoons ghee
  • 2 tablespoon nuts, chopped
  • A few strands of saffron

Method

  1. Blanch all the dry fruits in hot water and keep aside.
  2. Heat the milk in a thick-bottomed vessel till it thickens, stirring continuously.
  3. Separate the collected cream at the side of the vessel throughout the boiling.
  4. Once the milk reduces to 1/4 its quantity, add in the powdered cardamom.
  5. Add in the sugar, saffron and rose water and allow the rabdi to cool.
  6. Cut the bread slices into halves. Roast them till golden brown over ghee and set aside.
  7. Make a thick sugar syrup with the water, sugar saffron strands, cardamom powder and rose water.
  8. Dip the bread slices in the sugar syrup and arrange on a plate. Spread a tablespoon of rabdi over the bread slices.
  9. Garnish with chopped, blanched nuts.

Choco Coconut Laddoos

Absolutely sinful and melt-in-mouth recipe combining chocolate and coconut.

Ingredients

  • 1 cup grated coconut, fresh or desiccated
  • 2 tablespoons dark chocolate, chopped
  • 2 tablespoons butter, softened
  • 2 tablespoons milk
  • 1 tablespoon nuts, chopped

Method

  1. Pulse the nuts and chocolate in a blender till finely ground.
  2. Heat butter on a pan and toast the coconut with the nuts till golden.
  3. Take the pan off the heat and add the sugar, nuts and chocolate.
  4. Grease the hands with butter and roll the mixture out into laddoos.
  5. Roll them on a plate of desiccated coconut and store.
