All mummies will agree when I say that it can be quite difficult to come up with new healthy recipe ideas for kid's small hunger pangs. You may have tried different cuisines or created something new out of leftover food, but let's be honest, kids these days are very smart.
They understand that mummy is trying to feed me a sandwich made from the leftover gobhi ki sabzi or baigon ka bharta! We've all been there, haven't we.
So why not create healthy and completely unique recipes from something all the kids love- Nachos. Yes, that's right!
We bring you three recipes that are easy-to-make and not to forget, give you the freedom to add all those green veggies you're kids dread!
#1 Cornitos Nachos Pizza

Ingredients
- A bag of 150g Cornitos Extra Cheesy, Cheese and Herbs flavor Nachos Crisps
- Grated cheddar cheese, 50 g
- Finely chopped onions, 30 g
- Seeded and diced tomatoes, 30 g
- Pickled sliced black olives, 30 g
- Sliced red and green capsicum, 50 g
- Sliced jalapenos, 50g
Method
- Arrange a layer of Cornitos extra cheesy, cheese and herbs flavor Nachos Crisps on a dish
- Top it with all the ingredients
- Now add grated cheddar cheese on top
- Keep it in pre-heated oven for 1 minute until the cheese melts
- Serve it hot immediately
- Add oregano seasoning as per taste
The preparation time of this dish is just a minute and the mise en place including cutting and chopping of veggies will only take 10 minutes.

#2 Cornitos Veggie Nacho Delight (with beans and sour cream)

Ingredients
- Cornitos Peri Peri Nacho Crisps, 150 g pack
- Cornitos refried beans, 200 g
- Avocado cubes, 50 g
- Lettuce, 100 g
- Tomatoes deseeded & diced, 50 g
- Mint leaves, 10 g
- Grated cheddar cheese, 150 g
- Sliced jalapeno, 50 g
- Sliced black olives, 50 g
- Diced red bell pepper, 50 g
- Sour cream, 20 g
- Garlic cloves, 2 finely chopped
- Cumin seeds, 10 g
- Onion finely chopped, 50 g
- Smoked paprika, 10 g
- Salt to taste
Method
- Arrange the Nacho Crisps and all the ingredients in layers on a flat platter.
- Arrange lettuce leaves on base then add Cornitos Peri Peri Nacho Crisps topping it with refried beans and other chopped veggies.
- Repeat the same layering procedure on top of first layer till a four to five layer Nacho Crisp pyramid is created. Season it well.
- Add a layer of grated cheddar cheese on top of pyramid.
- Place the platter in a preheated oven till cheese melts.
- Garnish with dollop of sour cream and mint and can be served along with variety of dips.
The preparation time of this dish is 20 minutes and the mise en place including cutting and chopping of veggies will only take 10 minutes. This is for a serving of one plater, you can add more veggies and nachos for more plates.

#3 Cornitos Veggie Tacos

Ingredients
- Cornitos Taco Dinner Kit - 1 containing 6 Taco Shells
- Paneer / Tofu cubes, 125 g
- Red bell pepper cubes, 50 g
- Yellow pepper cubes, 50 g
- Cheese dip, 150 g
- Jalapeno sliced, 50 g
- Lettuce, 50 g
- Salt to taste
- White pepper powder, 5 g
- Cornitos taco seasoning, 1 pack
- Cornitos chunky salsa dip, 50 g
Method
For the filling: Marinate paneer / tofu with salt, white pepper powder, olive oil and keep aside for 10-15 minutes. Heat the griller and pour a little oil on it. Now, grill the paneer/tofu until done.
Assembling the Tacos: Arrange Taco shells on Taco Boat. Line the taco shells with lettuce and put the filling inside of grilled paneer cubes and seasoned bell pepper cubes.
Then spread cheese sauce evenly on top and sprinkle Cornitos Taco seasoning. Serve Tacos with Cornitos Chunky Salsa Dip.
The preparation time of this dish is 20 minutes and the mise en place including cutting and chopping of veggies will only take 10 minutes. This will serve two people and you can add more tacos for more kids.
