Only new mums can understand that infants who've just started solids can be really tough to deal with, particularly when you want them to eat nutritious vegetables such as beetroots and carrots. However, we feel that where there's a mum, she'll always find a way, right?
If you have a baby who's a fussy eater and one that smirks as soon as you put some vegetables on his plate, soups can be an excellent way to trick him into eating something nutritious.
Today we have a an excellent recipe of carrot and beetroot soup, which can be given to six to eight month old babies. Carrots are rich in vitamin A and beetroots are known for their iron-rich content and fibre. Here's how you can make it:
Beetroot and carrot soup for babies
Ingredients:
- 1/2 cup peeled and chopped beetroot
- 1/2 cup peeled and chopped carrot
- Salt, to taste
- Pepper, to taste
Method:
Pressure cook the carrot and beetroot in a little water for two whistles. Once it cools add to a blender and make a smooth puree. Strain the puree. For infants who're already a year old or above, there's no need to strain.
Pour the puree in a pan and boil for about five minutes. However, if you have already introduced your baby to vegetables you can also use oil and a clove of crushed garlic to stir-fry the soup. Once the soup is ready, add a little salt and pepper for taste or just feed the soup to your child like that only.
You can also add other vegetables such as beans and peas to the recipe or add a few leaves of spinach for that extra does of health.
