Mother's Day Special: A quirky twist to your mum's summer favourites

Mother’s Day is right around the corner and it is the perfect time to impress mummy dearest with some yummy summer treats. And the best way to add a little summer onto your mum's plate is to use seasonal ingredients and add an unusual twist to them.
We at theIndusparent asked Chef Ashish Rai, Culinary Head, Barbeque Nation, to show us just how to do that! So, he took four basic seasonal ingredients and created a delicious, flavourful and perfect for summer course exclusively for us.
Curd is one of the finest cooling agents for summer and there are several ways to include it in a meal. Move away from the usual dahi bhallas and chaats and use hung curd in the quirkiest way this time. "I recommend Dahi ke kebab made using hung curd, green chillies and basic seasoning, says Chef Rai.
Golden brown kebabs, served with green mint chutney are a winning pairing to impress your mother. These kebabs are succulent, scrumptious and healthy; a great way to start a summer inspired meal.
#2 Citrus Fruits
Citric fruits like lemon, orange and even grapefruits are rich in vitamin C and antioxidants. They also help to control appetite and aide in weight loss. Citric fruits are not only nutrition rich but also help enhance the flavours in a dish. Chef Ashish suggests using lemons to make Lemon Pepper Chicken, a dish that is light and resonates with summer.
"This recipe uses chicken breast which is rubbed with a delicious mix of lemon, green chillies, ginger garlic paste and basic seasoning. Once marinated, the chicken is grilled or pan fried to perfectly sear in the juices. Once it hits the table, the aroma and complex flavours of this dish will definitely impress mum," he says.

Muskmelons are high in water content and help you stay hydrated in the heat. In addition, this fruit has a very distinct taste and pairs very well with desserts. Chef Rai recommends a Muskmelon Phirnee whipped up using muskmelon, rice flakes, jaggery, saffron and coconut milk.
A spoonful of this decadent dessert and it’s on its way to becoming the next summertime staple.
In our country, mangoes are synonymous with summers. While mangoes have been the highlight of summers growing up, Chef Rai suggests a mocktail your mum is yet to try. Try Aamras mocktail. "It is made by mixing pieces of mango pickle, mixed fruit juice, lime juice and a dash of chaat masala. This spicy and tangy mocktail is the perfect finish to this flavour trail carved for your supermum," he says.
