5 innovative mango recipes that are a must-try this summer!

Mango is the king of all fruits, the richness and flavour is loved by people of all age groups.

Summer is mango season and almost everyone in the family waits to have this fruit to the fullest! Mango shake, aamras or just mango in its natural form-- wejust can't have enough of this summer fruit.

This is why we thought of sharing these 5 exciting mango recipes that mums can try at home to fulfil their family's mango cravings!

#1 Mango Pudding

#1 Mango Pudding

It is a Hong Kong dessert usually served cold. It is very popular in Hong Kong where pudding is eaten as a traditional British food. This recipe originated in India and was introduced from the British in the 19th century.

Ingredients:

1 tin (200 ml.) condensed milk,

1 tin measure milk,

1 tin measure yogurt,

ring mould greased with butter

Method:

Prepare the steaming vessel

Mix together condensed milk, milk and yogurt till well blended

Pour into the ring mould. Place it in the steaming vessel. Cover and cook till firm. (20-30 min)

Let cool completely and drain off the excess water.

Unmold onto a serving dish.

Surround with the mango pieces, pulp. Serve cold.

#2 Mango Lassi

#2 Mango Lassi

Lassi is one of the most refreshing yogurt based drinks of the Indian cuisine. It is had either salted or sweet or blended along with fruits to make a great summer drink.

Mango Lassi is a favourite at home and every summer, when mangoes are in full season, mango lassi makes its way into the kitchen for a refreshing drink.

Ingredients:

1 large Alphonso or local mango cut into small pieces, 1 cup plain yogurt, 3-4 tablespoons of sugar ( depending on how sweet is your mango), Water and ice as required, 2 tablespoons chopped or crushed pistachios or mint for garnish

Method:

Add in a cup of dice mangos in the blender jar to this add 2-3 tbsp. of sugar, to this add 1 cup of yogurt, using a blender mix the ingredients.

Add ice cubes to make it chilled and even add water if required to make the consistency smooth. Garnish it with mint leaves and it is ready to serve!

#3 Mango Frooti

#3 Mango Frooti

We all love frooti; it is one of the most refreshing summer drinks. The best part is you can even make it home with a few simple ingredients.

Ingredients: 1 small size raw mango, 1 small size alphanso mango, 1 ¼ cup of sugar, 3-½ glass of water

Method:

Take a pressure cooker and boil the 2 mangos in 1 ½ glass of water and give it 3-4 whistles

Take the 2 glasses of water and add the sugar and let it cool down. Get the mangoes out of the pressure cooker and mash it and get rid of the peals.

Next add the pulp to the sugar water and blend it well and it is ready to serve nice and chilled!

#4 Mango Cheesecake (No Bake, No Eggs)

#4 Mango Cheesecake (No Bake, No Eggs)

Mango Cheese Cake also can be called a Pudding is eggless and not baked is one of the simplest of the desserts to make for the summer parties.

This cheesecake is rich, creamy and full of flavours from the fresh fruit of the mango. It is eggless and there is no use of flours or even thickeners.

Ingredients: 1-½ cups of digestive or Marie biscuits (Crushed), ¼ cup of melted butter, 400 grams mascarpone cheese or regular plain cream cheese, ½ cup castor sugar, 2 cups freshly pureed mangoes, Some cut mangoes for topping

Method:

Take a few Marie biscuits and crush it in a food processor. Add butter and combine the biscuit and crumbs together.

In a large bowl add in the cream cheese and the powdered sugar, add in the mango puree and blend it all well

Take a small glass, add the biscuit crumbs and add the whipped mango mixture above it and cut a few chopped mangoes for the topping.

Chill it for a few hours until it is ready to serve.

The mango cheesecake is ready!!

#5 Mango Ice Cream ( No ice cream maker)

#5 Mango Ice Cream ( No ice cream maker)

Ice Cream is a frozen dessert made with usually milk or cream or a combination of both with flavours or fruits. It is a very popular dessert, and demanded mostly in summers. It might look as it is difficult to make, but on the contrary its very easy, especially since it uses only a few ingredients:

Ingredients: Whipped Cream 500 ml, Mango 1 KG (or 800 grams mango puree), 1 tin condensed milk 400 ml, 2-3 drops of vanilla essence,1-2 drop of yellow food color ( Optional)

Method:

Whip the cream well so that it has a good consistency and make sure it is chilled. Add the condensed milk to the cream and whisk it again properly and put it inside the fridge

Start making the mango puree in the blender and keep a little chopped mango aside.

Remove the cream from the fridge and add few drops of vanilla essence and the mango pulp and mix it well.

Incase you feel the color is light then you can add yellow food color (Optional)

The mango ice cream is ready, put it in an airtight container and keep it in the freezer for 4-6 hours and keep checking it after every hour so that there are no ice crystals.

After 6 hours, it is ready to serve!
