1. Broken Wheat Vegetable Khichdi

Ingredients:

  • 1/4th cup broken wheat
  • 1/4th cup moong dal
  • 1 tsp grated ginger
  • ½ cup tomatoes de-seeded
  • 2-3 tsp ghee for tempering
  • ½ tsp cumin seeds
  • ½ tsp turmeric powder
  • Chilli powder and salt as per taste
  • 2 cups water

Procedure:

  • Wash and soak the broken wheat and moong dal for half hour.
  • Pour ghee and temper with ginger, cumin seeds and add tomatoes
  • Add the remaining masalas and cook the tomato till mushy
  • Add the soaked broken wheat and moong dal, saute for 2 minutes
  • Add 2 cups of water and pressure cook for 2 whistles

2. Tempered Curd Rice

Ingredients:

  • 250gms of overcooked rice
  • 250gms of yogurt
  • Chopped green chillies
  • Chopped coriander leaves
  • ½ tsp grated ginger
  • ½ tsp mustard seeds
  • ½ tsp skinned black gram
  • ½ tsp chana dal
  • 5-6 curry leaves
  • A pinch of asafoetida
  • 2-3 dried red chillies
  • Salt to taste
  • Oil to temper

Procedure:

  • Mix the cooked rice, yogurt, coriander, ginger, green chillies and salt.
  • Heat the oil for tempering, add mustard seeds, and the dals.
  • Add red chillies, a pinch of asafoetida and curry leaves.
  • Pour it over the Rice mixture and serve cold!

3. Brown Rice Salad

Ingredients:

  • 1 cup of cooked brown rice
  • 1 carrot, cubed
  • 1 capsicum, cubed
  • 1 onion, cubed
  • ½ cup boiled corn
  • Crushed baked nachos
  • Olive oil
  • 2 tsp chopped olives

For the dressing:

  • 1 tsp Peanut butter
  • 1 tsp Soy sauce
  • 1 tsp Vinegar
  • 1 tsp honey
  • Crushed peanuts
  • 1 tsp sesame seeds

Procedure:

  • Lightly grill the cubed carrots, capsicum and onions.
  • Toss cooked brown rice, corn, grilled vegetables, olives and olive oil.
  • Whisk together the ingredients for the dressing in a separate bowl.
  • Mix the rice, vegetables and dressing and top it with crushed baked nachos and eat well!
